On the inside route from the Gold Coast Seaway to Moreton Bay, we stopped overnight at Brown Bay.  This is a nice calm anchorage off the Main Channel with good depth (15-20 feet) and good holding (muddy).  It did get buggy after dark, so be prepared with screens, mosquito coils or whatever is necessary.  But, it was flat calm, well protected and a great place to spend the night before continuing north the next day.
